My family loves this recipe. For a little added flavor we smoke on the smoker for 4 hours and finish in the oven for another hour and a half at 350. Shreds easily!!

I used .25 cup lime and it was wonderful. My limes were small and I needed lots of them!

Made this instead of a tradional “pork and saurkraut” and we like this so much more. Hardest part is trimming off all the fat that I can, then so easy to do in slow cooker. Did marinated it a whole day and overnight. It has been awhile since I have made it and it is a favorite. I did the quick slaw and we had choice of mashed cauliflower /potato or rice –so good, I will repeat it again soon.
