Made for the 2nd time today. 1st time followed the recipe mostly but used a whole egg, regular sugar and made regular sized muffins. Today I did the same but added a Tbsp of espresso powder and subbed 1/4 cup vanilla protein powder for the flour. Both versions are delicious! I preferred the 2nd version, my husband preferred the 1st.

I have a wheat free kiddo and made with 3/4 cup king Arthur’s gluten free measure for measure and 1/2 cup oat flour. They turned out so good. I didn’t even have chocolate chips and they still had a lot of flavor.

So – I used all-purpose flour and all of the 15oz can of pumpkin. They are perfect! My whole family loves them!!!

I have made this multiple times and both kids love them. I love this uses whole wheat flour and coconut oil. I do use regular sugar but want to try the monk fruit!
