One of my favorite summer salad combinations is watermelon with feta, balsamic, red onion and arugula. It’s so refreshing and light, and perfect to make in jars to take to the beach or park (I keep them chilled in cooler).
If you’re not familiar, making a salad in a jar is great when you want to pack a salad to go, complete with dressing. You layer the dressing first, then anything that won’t absorb the dressing and wilt (such as cheese and onions), then leave the most delicate salad greens at the top. To eat, shake the jar and pour it out onto a plate.
I live 10 minutes from the beach and always get mad at myself when I don’t have time to pack lunch because buying food at the beach is not cheap and the options aren’t always very healthy. I came up with this idea and made one for my friend Gab and she loved it! This is great as a light lunch, I recommend making as many as you plan on eating that day, or if you want to make this for a side dish in a large bowl, that would work too!
Watermelon Feta Arugula Salad in Jars
Ingredients
- 4 cups diced seedless watermelon
- 3 oz crumbled feta
- 3 cups baby arugula
- 1/4 small red onion, chopped
- 2 tbsp balsamic vinegar
- 2 tbsp extra virgin olive oil
- 1/8 tsp kosher salt
- fresh black pepper
Instructions
- Divide the dressing equally between 4 pint sized glass jars. Divide and layer the onion, feta, watermelon and finish with 3/4 cup arugula.
