Wow,wow,wow! This exceeded my expectations. My husband can’t stop talking about this one. I made it vegetarian for our nephew and he loved it too. You hit another one out of the park. Thank you Gina. I never would’ve thought to put asparagus in a panini.

I used almond pesto spread instead of mayo, but all-in-all, this was a great sandwich. I don’t have a panini press, so I used a grill pan then placed a cast iron skillet on top of the sandwich to flatten it, which worked pretty well. I made this two days in a row after trying it for the first time.

This is one of my favorites! It’s so tasty!

Any small one would work.
