Watermelon Arugula and Feta Salad
I love the flavor combination in this simple watermelon feta and balsamic salad. It is wonderfully sweet, salty, peppery, fresh and summery. The balsamic vinaigrette compliments the flavors in the salad perfectly, it’s fresh, flavorful and scrumptious! This salad is perfect to serve with anything you’re grilling. Try it with grilled chicken, steaks or grilled shrimp to make it a meal!
If you need a summer side dish or salad for a bbq, this is always a hit!! The first time tried watermelon in a salad with Feta, I was in a very trendy neighborhood restaurant in Brooklyn and I loved it! I’ve been making this salad, which I first shared in 2011, ever since! All the ingredients compliment each so well and it’s so pretty to look at too. I’ve brought it to parties and everyone loved it.
Variations:
- Substitute the arugula for Romaine, butter lettuce, watercress or mixed greens and we love it just the same!
- Swap feta for goat cheese or ricotta salata
- To feed a crowd just double or triple the recipe and make the dressing on the side.
How To Make Watermelon Feta Salad
- Wash and dry the lettuce
- Make the balsamic dressing by combining balsamic vinegar, olive oil, salt and pepper.
- Dice the watermelon and combine when ready to serve.
- Top with the balsamic viniagrette.

Watermelon Arugula and Feta Salad
Ingredients
- 3 cups seedless watermelon, cubed and chilled
- 1/2 cup crumbled feta
- 7 oz arugula
- 1/4 small red onion, sliced very thin
- 2 tbsp balsamic vinegar
- 2 tbsp extra virgin olive oil
- kosher salt and fresh pepper
Instructions
- Wash arugula and dry well.
- In a large bowl whisk vinegar, olive oil, salt and pepper.
- Toss with the remaining ingredients and serve.
