- Ground turkey – I used 99% lean ground turkey.
- Veggies – This taco soup is loaded with onion, bell pepper, Rotel tomatoes with green chilies, and corn.
- Beans – I used no salt added kidney beans and fat-free refried beans. You could use black beans in place of the kidney beans if desired.
- Taco seasoning – You can use your own homemade taco seasoning or opt for a low-sodium packet of seasoning from the store.
- Chicken broth – I always recommend using less-sodium broth in soups to control the salt level.
How to Make Taco Soup

- Cook the meat. Brown the turkey, breaking it up into small pieces as it cooks. Add the onions and pepper and cook for an additional 2-3 minutes.
- Simmer. Stir in the remaining ingredients. Bring the soup to a boil then cover and simmer for 10 to 15 minutes, to give the flavors time to meld.
- Enjoy. Serve with your favorite toppings and enjoy!
Tips & Variations
Here are a few things to keep in mind when making your turkey taco soup.
- Drain any grease. If you use 99% lean ground turkey as I did, it shouldn’t create any grease during the cooking process but if you use a less lean percentage, it may. Just drain any grease from the pan before adding the veggies.
- Adjust the heat level. This soup is quite mild when prepared as written but you can customize that by using spicy Rotel or replacing some of the bell pepper with diced jalapeno.
- Simmer longer if desired. You can absolutely let this soup simmer for more than 10 to 20 minutes, which will only increase the flavor of the soup. But there are enough bold flavors in there that 10-20 minutes is plenty of time for a tasty bowl of soup.
- Swap the protein. You can use ground pork, beef, or chicken in place of ground turkey if desired. You could even make this a vegetarian recipe by omitting the turkey and adding more beans.

Just as with regular tacos, you can customize each bowl of turkey taco soup with your favorite toppings. Here are some ideas:

Proper Storage
- Fridge. Store leftover taco soup in an airtight container in the fridge for up to 4 days.
- Freezer. Once cooled, transfer to a freeze-safer container and freeze for up to 3 months. Thaw overnight in the fridge.
- Reheat. You can reheat your turkey taco soup on the stovetop or in the microwave. You may need to thin it out a bit by adding more broth or water.

Turkey Taco Soup
Ingredients
- olive oil spray
- 1.3 lbs 99% lean ground turkey
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 10 oz can rotel tomatoes with green chilies
- 15 oz canned or frozen corn, drained
- 15 oz no salt added kidney beans, drained
- 8 oz tomato sauce
- 16 oz can fat-free refried beans
- 2 tablespoons + 1 1/2 teaspoons taco seasoning, or 1 packet store bought low-sodium taco seasoning
- 2 1/2 cups less-sodium chicken broth
Instructions
- Spray a large pot with cooking spray then brown the turkey over medium heat, breaking up with a wooden spoon as it cooks. When cooked through, add the onions and pepper and cook 2-3 minutes. Add tomatoes, corn, beans, tomato sauce, re-fried beans, taco seasoning and chicken broth. Bring to a boil, cover and simmer about 10-15 minutes.
- Serve with your favorite toppings such as low fat sour cream, jalapeños, reduced fat cheese, chopped scallions, onions, or chopped fresh cilantro. Freeze leftovers in individual portions for future meals.
